Recipe: Vegan Keto Pancake

After a good night’s rest, breakfast is an important meal to give you the energy you need to go about your day. For those of us on keto diets, the options need not be limited or difficult to prepare. And if you’re not on a keto diet, this is just as delicious a recipe to give you protein to keep you feeling satiated.

For even more of that healthy indulgence, make your very own nut milk using our Unsalted Pili Nuts (*recipe below). Containing nutrients like Vitamin E and magnesium, you’re sure to get that extra boost to power through the rest of your day.

INGREDIENTS:

1 Cup Almond Flour

2 Scoops Soy Protein

2 TBSP Sukrin (substitute with any other sugar alternative or honey if non-vegan)

1 TBSP Vanilla

3 TBSP Ground Flax Seed

6 TBSP Water

1 Cup Unsweetened Almond Milk (substitute with Unsalted Pili Nut milk*)

1 TBSP Cinnamon

1 TSP Baking Powder

Strawberries to serve

 

DIRECTIONS:

1. Mix flax seed and water in a small bowl and let sit for 5 minutes.

2. Mix all the dry ingredients in a large bowl.

3. Add the wet ingredients and the flax mixture to the bowl. Stir until well combined.

4. Refrigerate for 10 minutes until pancake mix has thickened slightly.

Heat a pan and add a little coconut oil. Fry 1/4 cup of the batter at a time.

Be careful not to get the pan too hot otherwise the pancakes will burn before

cooked through, They should take about 2-3 minutes each side.

5. Stack, top with berries and enjoy!

*How to make Pili Nut Milk:

Combine 1 part Unsalted Pili Nuts with 5-6 parts water (depending on desired consistency) in a blender. Mix, strain and enjoy!
