Cauliflower is a brilliant low-carb alternative to potatoes, and they contain lots of phytonutrients too! Served as a lighter alternative to mash potatoes.

INGREDIENTS

450g cauliflower, chopped into florets

60g Pili Pushers Unsalted pili nuts

24g water
-
¼ teaspoon Himalayan pink salt

Pinch of black pepper

Optional
-
2-3 cloves of roasted garlic
-
1 teaspoon fresh chopped thyme
METHOD

Fill a large saucepan with about an inch or two of water and insert a steamer basket

Bring the water to a boil, and add the cauliflower florets into the basket

Steam for 7 to 8 minutes or until fork tender

Blend pili nuts, Himalayan pink salt and water until it forms a smooth fluffy cream
-
Add drained cauliflower florets (optional: add garlic too) into the pili nut cream and continue to blend till combined and smooth

Sprinkle thyme and black pepper
